Ingredients
  

Sushi Rice
  • 2 cups sushi rice cooked
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
Shrimp Filling
  • 8 large shrimp peeled and deveined
  • 1 cup panko breadcrumbs
  • 0.5 cup flour
  • 2 eggs beaten
  • 1 tbsp vegetable oil
Roll Assembly
  • 4 nori sheets
  • 1 cucumber sliced into strips
  • 1 avocado sliced
Volcano Topping
  • 0.5 pound imitation crab meat chopped
  • 0.5 pound cooked shrimp chopped
  • 0.33 cup mayonnaise
  • 2 tbsp sriracha
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp cream cheese softened

Equipment

  • Bamboo sushi mat
  • Mixing bowls

Method
 

  1. Cook sushi rice and season with rice vinegar, sugar, and salt.
  2. Bread shrimp with flour, eggs, and panko breadcrumbs.
  3. Fry shrimp until crispy and golden brown.
  4. Mix imitation crab, shrimp, mayonnaise, sriracha, soy sauce, sesame oil, and cream cheese in a bowl.
  5. Spread sushi rice over nori sheets and add cucumber, avocado, and crispy shrimp.
  6. Roll tightly using a bamboo mat and slice evenly.
  7. Top rolls generously with spicy seafood mixture.
  8. Broil briefly until topping becomes warm and lightly golden.
  9. Drizzle with eel sauce and spicy mayo before serving.

Notes

Use wet hands when handling sushi rice for easier rolling. Fresh avocado and crispy shrimp create the best texture contrast.
