Ingredients
  

Crust
  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter cold
  • 0.25 cup powdered sugar
  • 1 egg yolk
Filling
  • 3 cups rhubarb sliced
  • 0.5 cup sugar
  • 1 tbsp cornstarch
Lavender Custard
  • 0.75 cup heavy cream
  • 1 tsp culinary lavender
  • 1 egg
  • 1 egg yolk

Method
 

  1. Prepare tart dough and chill for 30 minutes.
  2. Roll dough and press into tart pan.
  3. Blind bake crust until lightly golden.
  4. Mix rhubarb filling ingredients.
  5. Infuse cream with lavender and strain.
  6. Whisk eggs and combine with lavender cream.
  7. Fill crust with rhubarb and pour custard over.
  8. Bake until custard sets.
