Ingredients
  

Stew Base
  • 2 lbs beef chuck cubed
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 3 carrots chunked
  • 3 potatoes cubed
  • 4 cups beef broth

Equipment

  • Dutch oven
  • Wooden spoon
  • Chef’s knife

Method
 

  1. Brown beef in olive oil until deeply caramelized.
  2. Sauté onion and garlic in the same pot.
  3. Add tomato paste and flour, stirring well.
  4. Deglaze with wine and return beef to pot.
  5. Add vegetables, broth, and seasonings.
  6. Simmer gently for 2 hours until tender.

Notes

Flavor improves after resting overnight.
